It’s no secret Italian’s LOVE EGGPLANT! What I am LOVING even more is this eggplant product from Trader Joes!
My family are meat eaters, good ol’ carnivores. With that in mind, I tend to eat my Meatless Meals during the day.
Here’s my latest Meatless lunch recipe:
A few Eggplant Cutlets, fried in Olive Oil until Golden Brown (about 2-3 minutes each side).
Cut up some Spinach.
Place under cooked eggplant and on top of your meal as a garnish. Nice, way to sneak in a healthy veggie.
I added Roasted Garlic & Herb Prego Marinara Sauce and Parmesan Cheese. This is another good reason not to cook with salt. Products like these already have them. LUNCH DONE!
Tip Alert: I learned of this product via Trader Joes Samples. If Trader Joes is sampling something, you can find the product right next to sample stand. Don’t go hunting for it down the aisles like I did! Haha! R*
